Basil Pesto

Ingredients:

  • Bunch of Basil (1.5 Cups)
  • 45g Pine Nuts
  • 60g Grated Parmesan
  • 5 tbsp olive oil

Method:

  1. Spread the pine nuts over a baking tray and bake in 180°C preheated oven for 5 minutes or until toasted. Remove from oven and set aside for 10 minutes to cool.
  2. Place the pine nuts, basil, garlic and parmesan in the bowl of a food processor and process until finely chopped.
  3. With the motor running, gradually add the oil in a thin steady stream until well combined.

Makes 1 cup pesto. Great to use in Chicken Pesto Pasta
