Chicken Enchiladas

2 chicken breasts diced
80 g chorizo diced
300 g salsa store bought
2 tsp mild paprika
8 mountain bread wraps
100 g light grated cheese

  1. Heat chorizo in dry pan and let it cook for a few minutes to release the oils, then add chicken cook
  2. Add salsa and paprika, stir, and reduce heat to a light simmer
  3. Spray a baking dish
  4. Lay out your wraps and spoon the mix into the middle of the wrap and roll it up
  5. Place wraps in your baking dish
  6. Spread the cheese on top of the enchiladas
  7. Bake at 180C, uncovered for 15mins, until the cheese has melted
  8. Serve with a salad or steamed vegetables for a well balanced meal
